Course Description & Objectives: 

The milk production chain: milk quality assurance along the value chain; influence of raw milk quality on quality of milk products. Milk composition: milk protein chemistry; milk fat chemistry; advances in analytical methods – genomics, proteomics. Starter culture technology: the metabolism of lactic acid bacteria and the role of non lactic acid bacteria in the production of fermented milk products.
